Green Bean Fries

Well.... Presley is still being a crazy picky eater, so I'm constantly working on trying to make food that she will see as "fun" and therefore want to try.

Now I'm gonna be totally real with you guys. Presley was not even willing to try these (seriously living on pouches right now), but the rest of us, including Monroe, devoured these.

No joke, as soon as I said I was done snapping pictures, they were gone. This is so good, so easy, and a great way to get your serving of veggies.

Here is how i made these (Baked) Green Bean Fries:

INGREDIENTS:

  • Green Beans (I like to buy the pre-washed, pre-trimmed bag in the produce department)

  • Italian bread crumbs

  • Flour

  • 2 Eggs

  • Olive oil spray

INSTRUCTIONS:

Preheat the oven to 375.

1. Place bread crumbs, flour, and 2 eggs (scrambled) into three separate bowls.

2. If not already done, prep your Green Beans by washing and trimming.

3. Line a baking sheet with non stick foil or spray with a non stick spray.

4. Coat green bean in flour, then the egg wash, then the bread crumbs. Repeat until all of the Green Beans are coated.

5. Lay them all flat on the baking sheet and spray them all with the olive oil spray. This will help them get that crispy fried texture / look.

6. Insert into oven for 15 minutes. Flip and coat the other side with the olive oil spray. Cook for another 20 minutes.

7. Serve with your choice of dipping sauce and enjoy.
