Witchin' Ice Cream Cake


It's October witch (haha see what I did there?) means it's officially Halloween season! But wait... It's still 89 degrees outside here in Austin. How are we supposed to get in the spirit when we're still dreaming of ice cream? In comes this Witchin' Ice Cream Cake! This cake is sure to impress the ghouls and goblins in your life, and the best part is.... IT'S SO EASY!

SUPPLIES:

Cake Circle (to fit in pan)

Springform round pan

Ice cream sandwiches (I used around 18-20 rectangles)

Large tub of Cool Whip

Green food coloring

Edible eyeball sprinkles and basic green sprinkles.


HOW TO:

1. Place your cake circle at the bottom of your springform pan.

2. Start layering your ice cream sandwiches. Cut around the edges of the sandwiches to shape and fit them into the round edges of the pan. Do this until you've reached the top of the pan.

3. Place your pan In the freezer for at least one hour.

4. Mix your Cool Whip with green food coloring until you've reached your desired color. (I used my kitchenmaid mixer)

5. Remove your cake from the freezer and pop it out of the pan. (It should still be on the cake board)

6. Frost your cake.

7. Add eyeballs and green sprinkles (warts)


Notes: As the Cool Whip Melts, it will smooth itself out. No need to stress about it being perfect. The droopy look is a plus. You may need to put the cake back in the freezer in between steps.
